1lb prawns 2T chopped garlic 1T chopped scallions or chives 3T butter or olive oil 1 orange (lemon, lime or ruby red grapefruit can be substituted for orange) ½ cup champagne(white wine or chicken stock can be substituted) t=teaspoon T=tablespoon
Shell and devein 1 lb prawns. In a fry pan over med-high heat sauté 2T chopped garlic and 1T chopped scallions or chives in 3T butter or olive oil, when garlic starts to brown add prawns and turn heat up to high cook prawns about 2 minutes and turn over, immediately pour juice of 1 orange(lemon, lime or ruby red grapefruit can be substituted for orange) over prawns. Remove prawns from skillet and add ½ cup champagne(white wine or chicken stock can be substituted)continue to cook on high heat until liquid is reduced by half, pour over prawns and enjoy!
Works well with scallops, and for more flavor cook in bacon grease
